How does bold text work on YouTube if it has no formatting?+
It is not really bold. These are separate Unicode characters from the Mathematical Alphanumeric Symbols block that look like styled Latin letters, which is why they survive a plain-text caption field.
Will everyone see it correctly?+
Almost everyone, on current phones and browsers. Very old devices and a few fonts render missing glyphs as empty boxes instead.
Is there a downside?+
Yes, and it is worth knowing. Screen readers announce these as mathematical symbols or skip them entirely, and search does not match them against normal text. Fine for a word or two; a whole post in styled text is unreadable to anyone using assistive technology and invisible to search.
